"Il Lusso della semplicità: i segni e i gesti": un volere capire cosa rimane di immutato, di chiaro e di preciso nel tempo in una ricetta, quei segni e quei gesti che caratterizzano anche il più creativo dei cuochi. Come non esiste una tradizione ferma e immutata, così non esiste un cambiamento nuovo al 100 per cento. C’è sempre del movimento nella prima e del noto nella seconda, solo che in un caso è troppo lento per essere percepito dai più e nell’altro è troppo rapido al punto da nascondere gli elementi di continuità.
